This recipe is so fast that I have actually whipped it up and popped it in the oven while my guests were relaxing in my living room after dinner and they didn't even notice what I was doing!
Don't blink because it will be gone that fast, too!
First:
1 large can of sliced peaches, in pear juice
Pour off most of the juice (leave about 1/2 c.) and spread contents in a 9" pie dish. Sprinkle cinnamon and sugar.
Topping:
1/3 c. flour
1 c. rolled oats
1/2 c. brown sugar (I use Sucanat, or Fructose with a drizzle of molasses)
1/2 tsp. Salt
1 tsp. cinnamon
1/3 c. oil
Mix together well. Spread over peaches. Bake at 350 for 20 minutes. Serve with a dollop of whipped cream, if you like! Serves up to 6. Or just me.
