it's Recipe thuRsday: Super Power Granola

Get ready for Superhero-like powers after enjoying some of this in the morning!







8 c. Oats
1/4 tsp. Salt
1 tsp. Cinnamon
1 1/2 c. Nuts (ie. chopped pecans, walnuts, almond slices)
1/2 c. Shredded Coconut

1/2 c. Honey
1/2 c. Oil
1 tsp. Blackstrap Molasses
1 tsp. Vanilla

1 c. Dried Fruit/Berries (ie. cherries, blueberries, cranberries, raisins) -- add last

Preheat oven to 300 F. Mix the dry ingredients together first, in a large mixing bowl or 9x13 casserole dish. Add honey, oil, molasses, and vanilla. Mix everything thoroughly. Bake for 20 minutes. Remove from oven and stir it up, then return to oven. Bake for another 20 minutes.  Add dried fruit/berries after baking to avoid carmelizing.  Let granola cool in the pan on a cooling rack, stirring every 10 or 15 minutes so it doesn't clump. Store in an airtight plastic container or ceramic crock.

NOTE: When baking for a large family, you can mix an entire 42 oz. carton of oats with 1 c. oil and 1 c. honey.  Increase all the other ingredients as well, according to your judgement for taste and texture.  Blackstrap molasses is so healthful that I usually put closer to 2 Tbsp.
